Rose cake by Pedlars of Sunshine



Here's a photo of the rose pink cake I made last weekend, on a special order for my Aunt's birthday. It is a 3 layer victoria sponge - layers of moist butter cake with raspberry jam and buttercream filling.

I had so much fun making this cake, and it was a smashing success at the party. Yay!

Re your query on the beer cake - I'd multiply the quantities by 1.5 for the cake, but leave the buttercream the same. (I know that means 1.5 eggs - but just use 2!)
I think the cupcake quantities might make a skimpy 8inch round cake - a bit thin!
